An appointment type is always in one of three states. The Bookings column in the appointment types table shows which.

Neither pausing nor archiving touches appointments that are already booked. They go ahead as normal.
Open the type and choose Pause bookings. Or, while editing the type, switch off Accepting bookings in the Bookings block at the top of the Basic Info tab. That change takes effect when you save.
Jump asks you to confirm first. The confirmation lists the booking links the type will drop off, and how many upcoming appointments are already booked. Those appointments are unaffected and will go ahead.
Once paused, the type comes off your public booking pages and patient links straight away, and staff can only book it with override permission.

Where it will appear. The check lists the booking links the type will appear on. Staff booking and patient links also offer it, and any Who can book restriction to members is shown here too.
When you create a brand-new type, there is no confirmation. A new type isn't in any schedule yet, so the check would always warn. The block shows which booking links it will appear on instead.
Using the older appointment type editor? The switch is labelled Active and sits on the Booking Rules tab under Workflow & Visibility. Switching it off pauses the type in exactly the same way, but switching it on doesn't run the readiness check. Use Pause bookings and Start accepting bookings from the type's actions to get the confirmations and checks.
In the Book appointment drawer, paused types are listed with a Paused badge.
Archived types aren't offered at all, and override permission doesn't change that.
Patients never see a paused or archived type, wherever they book.
You can add a paused type to sessions, schedules and availability templates, so everything is ready the moment you start accepting bookings. It is marked Paused in those lists, and it is never ticked for you automatically. Archived types don't appear there.
To archive a type, open it and choose Archive under the destructive actions. If it is still accepting bookings, archiving pauses it too, and the confirmation lists the booking links it drops off.

To bring one back, open the Archived view, click the type and choose Unarchive. It returns as Paused, so it goes through the readiness check before it takes bookings again.

Tick several types to pause them, start accepting bookings, archive or unarchive them together from the bar that appears. When you start several at once, Jump runs the "Before it goes live" checks for each one, starts those that pass, and tells you which were held back and why.
Before Paused existed, switching a type off hid it from the table, so to your practice it was already archived. Every type that was switched off before this change is now Archived. If you want one back, unarchive it and it returns as Paused.
